Shells and Cottage Cheese Recipe
Nothing is better than some onions fried in butter, the mixed with pasta and cottage cheese. Who needs mac and cheese from a box when you can make this dish in minutes.
Mom used at least 2 sticks of butter here, I have cut it down to one. Go ahead, if you feel it needs more and add more. I won’t tell.
Comfort food is where it’s at and this meal gives you plenty. It’s quick and easy to make. Make extra so you can reheat it and enjoy a quick snack.
Ingredients
- 3 cups medium shell pasta (8 ounces or 225 grams)
- 1/4 pound butter (1 stick or 1/2 cup or 115 grams)
- 1 large spanish onion diced small
- 1/2 pound cottage cheese (225 grams or 1 cup)
- Salt and Pepper to taste

Instructions
- Peel and dice onion into small pieces. I do about a 3/8-inch dice. Heat a pot of salted water for the pasta.
- While cooking the onions, cook the pasta according to package instructions, drain and reserve until needed.
- In a frying pan, melt the butter. Add the onions and cook until on medium heat until they are just starting to brown. Season with salt as pepper to taste.
- Add the cooked pasta and the cottage cheese, mix well. Season with additional salt and pepper to taste.
- Heat the mixture until the cottage cheese starts melting (a few minutes) on medium heat.) Serve.
Recipe Notes
If desired,some crumbled bacon may be sprinkled on top or ground beef may be mixed in.
