Joe’s Grilled Cheese Sandwich

Who does not love a grilled cheese sandwich. My only problem was I never kept my butter out so it was always hard out of the refrigerator and tore up my bread. Sure I tried putting a dollop in the frying pan for it to melt then put the bread slices on top, but I never achieved a good coating. Then one day I saw my answer on television, I have no idea what show it was anymore, but it worked wonders for me. My savior was mayonnaise. Who would of though something as simple as mayonnaise could work. Well mayonnaise is an egg yolk, spices,an emulsifier and oil. Just what I needed and so much easier to spread. I usually do the classic sliced American Cheese. When I buy my cheese I like to mix it up. One time it will be the yellow American, the next time the white American. I know it’s just a color difference, but we eat with our eyes and change is good.

Do not be afraid to try out the mayonnaise, you will fall in love with it. If you must, replace it with soft butter.

A serving of warm tomato soup brings back so many memories of school days.. . That was so many years ago, we best not go there. . .

  1. Preheat a frying pan or griddle on medium-low heat.
  2. Coat one side of each slice of bread with mayonnaise.
  3. Place 2 slices of bread mayonnaise side down in frying pan, add cheese on top and top with the other slide of bread, mayonnaise side up. Cook until light brown then flip the sandwich over and toast on the other side until that is golden brown. One last flip to the first side to rewarm it for a few seconds before removing to a plate.
  4. Slice the sandwiches into 4 pieces on the diagonals, place on serving plates and serve with a nice bowl of warm soup.
Recipe Notes

You may use almost any kind of cheese here,  American, cheddar, provolone, mozzarella, Swiss are just a few of good melting cheeses that work well.

Feel free to add tomato slices or bacon between the cheese slices to create a unique sandwich.
