Golden Vanilla Wacky Cake

Mom would make a wacky cake a couple of times a year.  Sure the cake was good, but I wanted something vanilla and adapted this recipe.  Hope you enjoy it.

I bake this in two 8-inch (20cm) round cake pans which I grease with Bakery Pan Grease and line the pan with wax or parchment paper and grease that.  This ensures the cake releases freely.  Wacky cakes have a habit of sticking.

The wacky cake was developed during the depression and war era in the 1900's. It did not use those scarce eggs. Most wacky cakes were chocolate, the white/vanilla ones were called crazy cakes. Either way, enjoy.

Instructions
  1. Preheat oven to 350ºF/177ºC. Prepare 2 8-inch (20 cm) cake pans by greasing with professional bakery pan grease and lining with wax or parchment paper.
  2. Place the dry ingredients in a mixing bowl and mix together.
  3. Add white vinegar and mix.
  4. Pour into prepared pans and bake at 350ºF/177ºC for 25-35 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool 10 minutes before removing from the pan, Finish cooling on wire rack. Ice as desired.
