French Toast

Mom would make French Toast for us on a weekend morning when things were less hectic. After all she had 5 of us at one time ranging in spanning 14 years, quite a challenge. While this recipe is slightly sweeter than what Mom made, I love it on its own without additional syrup so in the end I have reduced the sugar content of my meal.  But everyone is different and some do like the syrup, so add it if you wish.

  1. In a bowl, whisk the eggs, milk, salt, cinnamon, nutmeg and Splenda® until well combined.
  2. Heat a frying pan on the stove on medium.
  3. While the frying pan is heating up, dip slices of bread into the egg mixture, allow the bread to absorb the egg mixture then turn over to allow the other side to absorb some egg mixture.
  4. Place a tablespoon of butter or oil in the warm frying pan and coat the bottom of the pan. Remove the bread slices from the egg mixture one at a time and place into the frying pan. If you can get more into the pan, you can dip them into the egg mixture then place into the frying pan. Fry until they start browning lightly on the bottom then flip over the slice and continue cooking until it is done.
  5. Remove from pan to waiting dish. Cover or place in an oven at 170ºF to keep warm until ready to serve.
  6. Continue dipped bread into the egg mixture and frying until done. Adding more butter/oil to the frying pan for each batch as needed.
Recipe Notes

Sometimes you will find that the bread will absorb more liquid than others and you may run low on egg mixture. This is a simple recipe so just go ahead and crack another egg, add some milk, salt,  cinnamon and nutmeg and continue baking.

I cook any leftover egg mixture as a special cooks treat rather than throwing it out.
