Deviled Eggs

make a great appetizer.  Why would of though you can make something so simple as an egg look so elegant.

Starting off with some hard boiled eggs, slice them in half, mix the yolks with a few ingredients then refill the eggs and pretty them up.  Easy to do, just takes a little time.  A piping bag and a french star tip will make them look beautiful.

  1. Slice the hard boiled eggs in half lengthwise.
  2. Remove the yolks to a bowl and place the white aside until needed.
  3. Using a fork, mash the yolks until very fine. Add the remaining ingredients and mix well to combine.
  4. Fill a pastry bag fitting with an Ateco #866 French Star tip (or any one you desire). Not pipe the yolk mixture into each egg white swirling and filling the well left from the yolk.
  5. Garnish by sprinkling some paprika onto the yolks. Other items you can use for garnish, some cut red pepper, sprigs of dill or fennel, caviar just to name a few. Cover and refrigerate until serving time.
