Coconut Custard Pie

Mom would make coconut custard and egg custard pies all the time.  When she did not feel like making a crust, she just baked it in buttered small bowls.

Instructions
  1. Preheat the oven to 350ºF/177ºC.
  2. Measure out all ingredients.
  3. Place the eggs in a mixing bowl and whisk well.
  4. Add the sugar and nutmeg and whisk well.
  5. Add the vanilla extract, milk, salt and melted butter. Mix well.
  6. Add coconut, mix well to combine.
  7. Divide between two unbaked pie shells.
  8. Bake at 350ºF/177º for 20-25 minutes until the pie is set. The center should be set like gelatin, not runny.
  9. Cool. Store in the refrigerator.
