Bakery Pan Grease

Professional Bakery Pan Grease was developed by a great Pastry Chef Gretchen Price of Gretchen’s Bakery.  I wish I could come up with something better, but this is the best around.

Every baker should have some in their kitchen for when they need to grease and flour a pan.  This is much simpler since once you have the pan grease, you use a pastry brush to generously coat the pan.

The recipe is quite simple.  Equal parts of flour, solid vegetable shortening and vegetable oil.  So you can make as much as you want.

  1. Place the ingredients in a mixing bowl and mix until well combined.
  2. Place an air tight container and store on the counter top or in the refrigerator.
  3. To use - the pan grease should be at room temperature. Use a pastry brush to generously coat the baking pan. If you are lining it with parchment or wax paper also coat the wax paper.
